Mais sa v\u00e9ritable singularit\u00e9 r\u00e9side dans sa richesse aromatique.<\/p>\n<p><strong>Une fermentation cr\u00e9ative<\/strong><\/p>\n<p>Dans la r\u00e9gion de Risaralda, Cristian Franco cultive l&rsquo;Ombligon \u00e0 la finca La Maria.<\/p>\n<p>Afin de d\u00e9velopper ses ar\u00f4mes, il utilise une m\u00e9thode de cofermentation. Celle-ci associe les grains \u00e0 des fraises, des fruits tropicaux et des cultures de levures.<\/p>\n<p>Le m\u00e9lange fermente ensuite dans des contenants herm\u00e9tiques. Cette \u00e9tape favorise le d\u00e9veloppement de saveurs fruit\u00e9es et gourmandes.<\/p>\n<p>Apr\u00e8s la fermentation, les grains passent par un lavage et un s\u00e9chage \u00e0 basse temp\u00e9rature.<\/p>\n<p><strong>Une explosion de saveurs fruit\u00e9es<\/strong><\/p>\n<p>La fraise domine les premi\u00e8res impressions, accompagn\u00e9e de notes tropicales expressives.<\/p>\n<p>Progressivement, le caramel et le miel apportent de la rondeur.
